Sticky Wings with Creamed Corn

Chicken wings cooked in a chipotle sticky sauce and served with a creamed corn dip. Buttery corn is the perfect accompaniment and a tasty cooler to spicy and sweet wings.

Ingredients

  • 2 limes juiced
  • 700 g of chicken wings
  • 120 g of chipotle paste
  • 3 tsp of honey
  • 5 garlic cloves
  • 125 g of quark
  • 1 bunch of coriander, chopped (1/2 for marinade and 1/2 for corn)
  • 330 g of sweetcorn, drained and blitzed until smooth

Method

  1. Step 1

    Place the chipotle paste, garlic, honey, lime, coriander and pinch of salt & pepper in a food processor and blitz until smooth.
  2. Step 2

    Pour the marinade into a bowl. Prick each wing all over with a knife and then pop in the bowl of marinade, using your hands to fully coat each wing. Cover and chill for 3 hours.
  3. Step 3

    Pre-heat oven to gas 6, 200°C, fan 180°C and spread the wings on a baking tray (single layer). Cook for 35-40 mins.
  4. Step 4

    Meanwhile pop the blitzed sweetcorn in a pan over a low-medium heat. Add the quark and coriander to the corn and combine. Get stuck in and start dipping!
