Spinach and Red Pepper Egg Muffins

These super easy egg muffins are a handy snack to have in the fridge on standby and can use up any leftover veg if you don't have spinach and peppers to hand.

Ingredients

  • 100 ml of semi-skimmed milk
  • 6 eggs
  • 2 handfuls of fresh spinach, wilted
  • 50 g of cheddar cheese, grated
  • 3 red peppers, finely chopped

Method

  1. Step 1

    Preheat the oven to 180°C / gas mark 4 / 160°C fan.
  2. Step 2

    In a large bowl, beat eggs until smooth. Add in the milk, salt, Cheddar cheese and mix together.
  3. Step 3

    Stir in the spinach and chopped red pepper.
  4. Step 4

    Spray a regular 12 cup muffin pan with non-stick cooking spray. Ladle the egg mixture into each muffin cup until they are 3/4 full.
  5. Step 5

    Top with additional grated cheese.
  6. Step 6

    Place the muffin tray in the oven and bake for 25 mins. Once cooked, let them cool for 30 mins before removing from the pan. Serve and enjoy.
