Spicy Salami Carbonara

Spaghetti tossed in a creamy carbonara sauce with peppery, sweet, crispy salami. Take your carbonara to a new level! A simple switch from ham to salami will give an intense, peppery, sweet flavour that the original never experienced!Time and servings

Ingredients
- 350 g of dried spaghetti
- 1 sprinkle of rocket
- 2 dashes of pepper
- 80 g of salami, cut into strips
- 4 egg yolks
- 125 g of parmesan
- 1 tbsp of olive oil
- 2 cloves of garlic, minced
Method
Step 1
Drop the spaghetti into boiling, salty water and cook for 10 mins. Meanwhile, mix the egg yolks and parmesan and season with pepper- set aside.Step 2
Add oil to a pan over a medium-high heat and stir through the garlic for 1 min. Add the salami and cooking until the salami is crispy.Step 3
Drain the spaghetti (setting some of the pasta water aside) and transfer to the pancetta pan and toss through.Step 4
Reduce to a low heat and pour in the egg yolk mixture- continuing to stir so that the eggs do not scramble - add a little of the pasta water to loosen. Serve with a sprinkle of rocket and enjoy. A simple twist on a classic!
