Spicy Mexican Potato Wedges

Ingredients

  • 1 handful of coriander, fresh, roughly chopped
  • 430 g of refried beans, canned
  • 1 tsp of chilli flakes
  • 2 tsp of paprika
  • 1 tsp of cumin seeds
  • 200 g of sour cream
  • 4 tbsp of olive oil
  • 1 kg of potatoes, large, scrubbed

Method

  1. Step 1

    Preheat the oven to 200°C/400°F/Gas 6. Cut the potatoes into thick wedges and boil for 5 minutes. Drain well and return to the pan with the oil, salt, chilli flakes, paprika and cumin and toss everything together.
  2. Step 2

    Spread the wedges out on a non-stick baking sheet and cook in the oven for 35 minutes until they are crispy and golden.
  3. Step 3

    Pile the wedges into a warmed serving dish, scatter with fresh coriander and serve with warmed refried beans and sour cream for dipping.
