Spicy Mexican Potato Wedges

Ingredients
- 1 handful of coriander, fresh, roughly chopped
- 430 g of refried beans, canned
- 1 tsp of chilli flakes
- 2 tsp of paprika
- 1 tsp of cumin seeds
- 200 g of sour cream
- 4 tbsp of olive oil
- 1 kg of potatoes, large, scrubbed
Method
Step 1
Preheat the oven to 200°C/400°F/Gas 6. Cut the potatoes into thick wedges and boil for 5 minutes. Drain well and return to the pan with the oil, salt, chilli flakes, paprika and cumin and toss everything together.Step 2
Spread the wedges out on a non-stick baking sheet and cook in the oven for 35 minutes until they are crispy and golden.Step 3
Pile the wedges into a warmed serving dish, scatter with fresh coriander and serve with warmed refried beans and sour cream for dipping.
