Ingredients

  • 200g honey
  • 100ml light soy sauce
  • 50ml rice vinegar
  • 1 tbsp wasabi mustard
  • 50g soft brown sugar
  • 1 star anise
  • 1.5-2kg gammon
  • 1 orange, sliced
  • 1 cinnamon stick
  • 3 bay leafs
  • 6 cloves
  • 1 onion sliced

Method

  1. Step 1

    For the glaze, simmer the honey, light soy sauce, rice vinegar, wasabi mustard, soft brown sugar and star anise, together for 5 minutes and leave to cool.
  2. Step 2

    Place the gammon in a large pan and cover with water add the orange, onion, cinnamon stick, bay leaves and cloves. Simmer for 1 hour 20 minutes.
  3. Step 3

    Remove the gammon from the water and place on a non-stick baking tray / oven dish and brush with the glaze.
  4. Step 4

    Bake in a preheated oven on 150°C (300°F, Gas Mark 2) for 45 minutes brushing a new layer of glaze every 5 minutes.
  5. Step 5

    Rest the gammon before carving.
