Ingredients

  • 600 g of chicken thighs, boneless and skinless
  • 2 tsp of ginger & garlic paste
  • 150 g of plain flour
  • 1 tsp of salt
  • 1 tbsp of chilli powder
  • 75 g of gram flour
  • 4 tbsp of lemon juice
  • 5 ml of vegetable oil, for deep frying
  • 150 g of rice flour
  • 2 tsp of garam masala

Method

  • Step 1

    Marinate the chicken in the salt, ginger and garlic paste, lemon juice, one teaspoon of the red chilli powder. Cover the chicken and place in the fridge for an hour.
  • Step 2

    In a mixing bowl add gram flour, rice flour, plain flour, the remaining red chilli powder and salt.
  • Step 3

    Heat a deep fat fryer to 180C/350F Dust the marinated chicken in the seasoned flour mixture, then deep-fry the chicken until crisp and cooked through. Sprinkle the chicken with garam masala.
