Ingredients
- 1 pinch of salt
- 75 g of breadcrumbs
- 1 egg, beaten
- 1 dash of vegetable oil
- 1 red chilli
- 110 g of mashed potato
- 0.5 tsp of curry powder
- 75 g of plain flour
- 1 pinch of pepper
- 110 g of smoked haddock
- 1 lime, juice only
Method
Step 1
In a bowl mix together the smoked haddock, mashed potatoes, chilli, lime juice and curry powder until smoothStep 2
Season with salt & pepper to tasteStep 3
Shape 20 small round fish cakes from the mixtureStep 4
Place the beaten egg into one bowl and the flour and breadcrumbs into another bowlStep 5
Take each fish cake and dip into the egg bowl first and then into the flour and breadcrumbs. Ensure each fish cake is evenly coatedStep 6
Chill the fish cakes for 30 mins, then shallow fry each side until golden brownStep 7
Serve and enjoy.
