
Ingredients
- 750g new potatoes
- 100g feta, crumbled
- 1 red onion, finely sliced
- 3 tbsp red or white wine vinegar
- 2 tsp Dijon mustard
- ½ small bunch dill, finely chopped
- 1 tsp caster sugar
- 4 tbsp olive oil
Method
Step 1
Put the onion in a small bowl. Add the vinegar, sugar, a pinch of salt and 2 tbsp boiled water. Cover and leave to pickle for at least 30 mins.Step 2
Boil the potatoes in a pan of salted water for 15-20 mins until tender - ideally until a cutlery knife goes through easily then drain well. While the potatoes are boiling, pre-heat the oven to 220C°C/fan 200°C/gas 7.Step 3
Tip the potatoes onto a roasting tray and press down with the base of an oiled glass, ramekin, or spatula, until the potatoes are squashed. Lay out evenly on the roasting tray, drizzle over the olive oil, and season. Roast for 20-25 mins until golden and crisp around the edges.Step 4
Drain the pickled onions, and whisk the extra virgin olive oil, Dijon and most of the dill into the reserved pickling vinegar. Tip the smashed potatoes onto a platter. Crumble over the feta, and pour over the dressing. Scatter with the reserved dill, and pickled onions and tuck in!
