Ingredients
- 300g linguine
- 300g Morrisons market street ready to eat jumbo prawns
- 300g cherry tomatoes (a mix of colours is nice)
- 2 lemons, 1 halved, 1 juiced
- 15g flat-leaf parsley, roughly chopped
- 3 large garlic cloves, finely sliced
- 2 tsp sweet smoked paprika
- ½ tsp chilli flakes
- 100ml olive oil
Method
Step 1
This comes together quickly, so it helps to have everything ready to go. Start by putting the pasta on to boil in plenty of salted water.Step 2
Put a medium frying pan with high sides on high heat. Once the pan is hot, put the lemon half in the pan, flesh side down. Leave undisturbed for 2-3 mins, until it is beginning to brown and char, then set aside. Turn the heat down to medium.Step 3
Pour the olive oil into the pan. Once hot, lower in the garlic. Cook for 2-3 mins, stirring all the while, before adding the tomatoes and seasoning with salt and black pepper. Cook for 6-7 mins, stirring very frequently, until the garlic is golden and the tomatoes are burst and juicy.Step 4
Scatter in the paprika, chilli flakes and a little more salt and pepper. Cook for 2-3 mins, then stir through the cooked pasta, parsley, lemon juice and prawns. Mix well to combine and heat the prawns through. Serve with the grilled lemon on a big platter for everyone to help themselves.
