Ingredients

  • 1 coburg loaf
  • 1 jar Morrisons Bruschetta Sauce
  • 3 tbsp melted butter
  • 1 crushed garlic clove
  • ¼ red onion, finely chopped
  • 1 large ripe tomato, finely chopped
  • 60g pepperoni or salami slices
  • 200g fresh basil leaves
  • 200g Italian mozzarella, drained and pulled into chunks
  • Salt
  • Black pepper

Method

  1. Step 1

    Preheat the oven to 180°C (160°C fan, 350°F, Gas Mark 4).
  2. Step 2

    Place the loaf of bread on a chopping board. Using a bread knife, cut 1-inch deep rows crisscrossing across the top of the bread, being careful not to cut through the bottom of the loaf.
  3. Step 3

    Transfer the bread to a baking sheet lined with parchment paper.
  4. Step 4

    Remove the mozzarella from the packaging and pat dry with kitchen paper. Pull into chunks.
  5. Step 5

    Spoon the bruschetta sauce between the wedges of bread, followed by the onions, tomatoes, pepperoni slices, basil, and mozzarella chunks.
  6. Step 6

    Mix the melted butter with the crushed garlic, season with salt and pepper, and drizzle over the bread.
  7. Step 7

    Cover with foil and bake for 15 minutes, or until the cheese has started to melt.
  8. Step 8

    Uncover and bake for a further 10 minutes, or until the bread is crunchy and the cheese has melted all the way through and is piping hot.
  9. Step 9

    Remove and allow to cool slightly before serving.
