Scrambled egg and Smoked Salmon on Toast

classic breakfast treat - silky eggs and smoked salmon heaped onto our toasted

Ingredients
- 100 g of smoked salmon
- 4 eggs
- 2 tsps of butter, softened
- 2 slices of hovisⓡ granaryⓡ medium sliced
Method
Step 1
Crack 4 eggs into a bowl, add some salt and pepper for seasoning and then beat together with a fork.Step 2
Put a frying pan over a low heat and add some butter. Wait for the butter to melt and then pour in your beaten eggs, stirring mixture slowly until cooked.Step 3
Meanwhile, toast the slices of HovisⓇ GranaryⓇ and butter well. Top with your delicious scrambled egg and smoked salmon. Serve immediately.Step 4
To add a little twist... In a hot frying pan, lightly toast 2 tablespoons of mixed seeds until they begin to colour and then sprinkle over the top Or make a Za’taar by combining half a teaspoon of sumac & dried thyme with 1 teaspoon of sesame seeds and a pinch of salt. Mix together, and then sprinkle over the top. Or mix together one diced tomato and one small diced shallot with seasoning and a little extra virgin olive oil to make a salsa, and then spoon over the top when serving. Or finely chop a mixture of herbs with the zest of half a lemon and sprinkle over the top when serving.
