Ingredients
- 2 tablespoons olive oil
- 500ml vegetable stock
- 1 teaspoon white miso (optional, but tastes delicious - you could use 1/2 teaspoon Marmite/Yeast extract instead)
- 100g jumbo porridge oats
- Pinch of salt
- Pinch of black pepper
Method
Step 1
Heat the olive oil in a saucepan over medium heat.Step 2
Add the porridge oats and toast gently for a few minutes, stirring occasionally, until fragrant.Step 3
Gradually pour in the vegetable stock, stirring constantly, until fully incorporated.Step 4
Bring to a simmer, then reduce heat and cook for 5-7 minutes, stirring occasionally, until the oats are tender but still have a slight bite.Step 5
Stir in the miso (or Marmite/Yeast extract), salt, and pepper.Step 6
Serve immediately, topped with your favourite toppings such as chopped spring onions, sesame seeds, a drizzle of soy sauce, or a fried egg.
