Sausage, Cauliflower & Broccoli Traybake With Garlic Butter Croutons

An easy sausage traybake recipe in a sticky glaze, topped with garlic butter croutons for a flavour-packed midweek meal. Perfect for a quick, satisfying family dinner.Time and servings

Ingredients
- 8 sausages - Morrisons Market Street 6 Thick Pork Sausages
- 1 medium head of cauliflower, chopped into small florets, chop the leaves
- 1 head of broccoli, chopped into medium florets, stalk peeled, and chopped into chunks
- 2 sliced sourdough bread
- 1 red onion, cut into wedges
- 3 tbsp red wine vinegar
- 1.5 tbsp honey
- 3 tbsp wholegrain mustard
- 3 tsp fennel seeds
- 3 garlic cloves, crushed
- 2 tbsp soft herbs chopped basil, parsley and thyme
- 50g soft butter
- 3 tbsp olive oil
Method
Step 1
Heat the oven to 200°C/fan 180°C/gas 6. Toss the sausages, cauliflower, broccoli and onion into a baking tray. Whisk the vinegar, honey, mustard, fennel and oil together. Pour over the sausages and veg, and season.Step 2
Roast for 25- 30 mins until golden, sticky and glazed. Give everything a turn halfway through cooking.Step 3
To make the garlic butter croutons, melt the butter, garlic and herbs with some seasoning in a bowl in the microwave or in a small pan. Toss in the bread cubes and toss well. Scatter the croutons over the traybake, and bake for 5-10 mins more, until golden and crisp. Serve with roasties if you like.
