Cheesy and delicious, this classic rarebit recipe makes the perfect weekend lunch or light meal. Best of all, you can rustle it up in a speedy 10 minutes.Time and servings

Ingredients
- 100 g of cheddar, grated
- 300 ml of milk
- 4 slices of granary bread, (or wholemeal bread)
- 1 tsp of english mustard
- 213 g of canned red salmon, drained and flaked
- 40 g of plain flour
Method
Step 1
Place the milk in a pan with the Cheddar, flour and mustard and cook over a low heat, whisking continuously, until you have a smooth, thickened mixture.Step 2
Remove from the heat and fold in the salmon.Step 3
Toast the bread lightly on both sides.Step 4
Top one side of each with the salmon and cheese mix.Step 5
Place the rarebit under a hot grill for 2-3 minutes until golden brown and bubbling.Step 6
Serve with rocket to garnish.
