These tasty fritters are perfect as a snack or side dish. Easy to make and freeze for later, they're a great way to use up leftover root vegetables.

Ingredients

  • 2 carrots, grated
  • 1 red onion, thinly sliced
  • 1 sweet potato, grated
  • 1 parsnip, grated
  • 100g spinach, finely chopped
  • 50g gram flour
  • 2 eggs
  • 1 tbsp of ground cumin
  • 1 tbsp mango chutney
  • 1/2 lemon juiced

Method

  1. Step 1

    In a large bowl, combine the grated carrots, thinly sliced red onion, grated sweet potato, grated parsnip, and finely chopped spinach.
  2. Step 2

    Add the egg, ground cumin, gram flour, a pinch of salt and pepper to the bowl. Mix thoroughly until all the vegetables are evenly coated in the batter.
  3. Step 3

    Heat a frying pan over medium heat and add a good splash of oil.
  4. Step 4

    Once the oil is hot, use a tablespoon to drop spoonfuls of the mixture into the pan. Cook for approximately 2 minutes on each side, or until golden and crispy.
  5. Step 5

    Repeat with the remaining batter, we recommend cooking about 5 fritters at a time.
  6. Step 6

    Serve the fritters piping hot with the mango chutney dip and enjoy!
