Root vegetable fritters

These tasty fritters are perfect as a snack or side dish. Easy to make and freeze for later, they're a great way to use up leftover root vegetables.Time and servings

Ingredients
- 2 carrots, grated
- 1 red onion, thinly sliced
- 1 sweet potato, grated
- 1 parsnip, grated
- 100g spinach, finely chopped
- 50g gram flour
- 2 eggs
- 1 tbsp of ground cumin
- 1 tbsp mango chutney
- 1/2 lemon juiced
Method
Step 1
In a large bowl, combine the grated carrots, thinly sliced red onion, grated sweet potato, grated parsnip, and finely chopped spinach.Step 2
Add the egg, ground cumin, gram flour, a pinch of salt and pepper to the bowl. Mix thoroughly until all the vegetables are evenly coated in the batter.Step 3
Heat a frying pan over medium heat and add a good splash of oil.Step 4
Once the oil is hot, use a tablespoon to drop spoonfuls of the mixture into the pan. Cook for approximately 2 minutes on each side, or until golden and crispy.Step 5
Repeat with the remaining batter, we recommend cooking about 5 fritters at a time.Step 6
Serve the fritters piping hot with the mango chutney dip and enjoy!
