Ingredients

  • 450 g of rhubarb
  • 330 ml of whipping cream
  • 2 pieces of stem ginger
  • 125 g of caster sugar

Method

  1. Step 1

    Cut the rhubarb into 5cm-lengths and place in a saucepan along with the sugar and 2 tbsp water. Bring to the boil, then reduce the heat and simmer for 5-8 minutes, until the rhubarb is tender. Remove from the heat and allow to cool.
  2. Step 2

    Cut half a piece of ginger into strips and set aside, then finely chop the rest. Whip the cream until it forms soft peaks, then fold in the cooked rhubarb and the chopped stem ginger.
  3. Step 3

    Spoon into glasses and chill for 20 minutes. Decorate with the reserved ginger strips and serve.
