Red’s Chicken Twice Pizza

Defy the dough base and embrace the meaty alternative with this tasty Red’s True Barbecue take on a humble pizza, generously baptised with Unholy BBQ Sauce. Amen.Time and servings

Ingredients
- 2 tbsp of fresh coriander
- 0.5 small red onion, sliced into rings
- 60 g of mozzarella cheese
- 1 tsp of dried oregano
- 0.5 red pepper, sliced
- 60 g of medium cheddar cheese, grated
- 3 tablespoons of red's unholy bbq sauce
- 3 large chicken breast
- 1 tbsp of olive oil
Method
Step 1
Preheat oven to 200C/400F.Step 2
Wrap 2 of the chicken breasts in cling film and flatten them with a rolling pin into one thin overlapping base about ¼ inch/7mm thick.Step 3
Season with salt and pepper then sandwich between two pieces of oiled greaseproof paper onto a baking sheet and bake for 10 minutes.Step 4
Slice the remaining chicken breast into 2 inch strips and fry on high heat for 1 minute with the red pepper. Add 2 tbsp Unholy BBQ sauce and the red onion, and fry until the chicken is cooked through and the onions and peppers are softened.Step 5
Take the chicken base from the oven to cool, removing the greaseproof paper.Step 6
Place the sautéed chicken, onion and red pepper onto the chicken pizza base, layer on the cheddar and mozzarella and sprinkle over oregano.Step 7
Pour the remaining 1 tbsp Unholy BBQ sauce on top of the cheese, season with salt and pepper and bake in the oven at 200C/400F for 5 minutes. Once cooked, remove from the oven, garnish with chopped coriander and slice up using a pizza cutter.
