Red Pepper, Feta and Basil Pancakes

Ingredients

  • 15 g of fresh basil leaves
  • 200 g of feta cheese, crumbled
  • 2 red peppers, halved
  • 1 red onion, sliced
  • 2 tbsp of olive oil
  • 20 black olives, pitted

Method

  1. Step 1

    Put the pepper halves skin-side up on a baking tray. Grill for 10 minutes to blacken the skins.
  2. Step 2

    Immediately pop them into a polythene bag and leave to stand for 10 minutes so they ‘sweat’. Then peel the skins off and slice into thin strips.
  3. Step 3

    Heat 1 tbsp of the olive oil in a pan and gently fry the onion until it softens. Toss the pepper, feta and olives with the onion, then divide over the top of 4 pancakes. Scatter with basil leaves, drizzle over the remaining oil and season to taste.
