Quesadilla Stack

Quesadillas filled with layers of spicy and fragrant chicken, gooey cheese and orange spiked guacamole. The addition of orange adds a sweetness and acidity to the nutty guacamole that compliments the spicy, paprika notes of the chicken.Time and servings

Ingredients
- 4 tbsp of extra virgin olive oil
- 60 g of fajita seasoning
- 200 g of extra mature cheddar
- 300 g of guacamole
- 1 large red onion, thinly sliced
- 8 large vine tomatoes, roughly chopped
- 1 large orange, peeled and cut into 1/2 inch pieces
- 800 g of chicken breasts, cut into strips
- 3 cloves of garlic cloves, finely chopped
- 8 tortillas
Method
Step 1
Pre-heat oven to gas 7, 220°C, fan 200°C and add half the oil to a large frying pan over a medium-high heat. Add garlic and fry for 2 mins before adding the onion and frying for a further 5 mins.Step 2
Add the chicken and cook for 10 mins whilst continuously stirring and season. Add the tomatoes and fajita seasoning, stir and simmer for 15 mins and set aside.Step 3
Stir the orange segments through the guacamole and set aside. Add the rest of the oil to a non-stick pan over a medium heat.Step 4
Lay down a tortilla and top with the chicken, guacamole and cheese. Top with another tortilla. Cook for 3-4 mins on each side, cut into wedges and stack high. This really is the Jenga of food!
