Quesadilla Burger

Ingredients
- 2 pack Meatless Farm Burgers
- 4 slices Sliced Cheddar Cheese
- 4 Wraps
- 1 Avocado
- 1 Lime
- 250g Baby Plum Tomatoes
- 3 Red Chillies
- 1 Red Onion
- 15g Coriander
- 10g Cajun spices
- 60g Vegan Mayo
- Splash of red wine vinegar
- Oil, for cooking
- Salt, to taste
- Pepper, to taste
Method
Step 1
Preheat the oven to 180’c. Place half the tomatoes, 2 chillies and half of the red onion on a baking tray, drizzle with oil, season to taste. Roast in the oven for 20 mins.Step 2
Tip the burgers into a bowl, mix with half the Cajun seasoning, a handful of chopped coriander, zest of half a lime. Mix well, then shape into 2 large flat burgers roughly 13cm in diameter.Step 3
Finely chop 1 chill, the tomato and the remaining half of the onion and a handful of coriander, Mix together with a squeeze of lime and a little olive oil. Season to taste and set aside.Step 4
Remove the hot sauce ingredients from the oven, leave to cool slightly and then blitz with a stick blender or food processor with a splash of red wine vinegar (any vinegar will do) a drizzle of olive oil and season to taste.Step 5
Mix the mayo with the remaining cajun spice and a squeeze of lime and set aside.Half the avocado and scoop out the flesh into a bowl, smash with a fork with a squeeze of lime juice, a pinch of salt and a drizzle of olive oil, set aside.Step 6
Cook the burgers…heat a non-stick pan with a drizzle of oil, place the burgers in the pan and cook for 3 -4 mins on each side, then set to one side.Step 7
To prepare the quesadilla, using a small cereal bowl cut out a circle from the centre of two of the tortillas. Keep the small circles to one side, save the trimmings (bake in the oven till crispy for homemade tortilla chips) Place a whole tortilla on a chopping board. In the centre place a slice of the cheese, then place the burger on the cheese, top that with the salsa, then the avocado, then drizzle on some of the hot sauce, top with coriander, followed by another slice of cheese, then spread some mayo on the underside of the small tortilla circle and place on top of the cheese. Spread a little mayo on the edges of the large tortilla (this will act like glue) and fold the edges in.Step 8
Heat a non-stick pan with a drizzle of oil over a medium heat, cook the quesadillas in the pan for around 4 mins, weigh the top down with a sauce pan, then carefully flip it over and cook on the second side. Remove from the pan and keep warm whilst you cook the other.Step 9
Slice in half and serve with the remaining hot sauce, salsa and avocado.
