Nothing says autumn quite like pumpkin spice! So, celebrate the season with a Pumpkin Spice Mimosa, blending cosy flavours with a bubbly twist.

Ingredients

  • 500ml fresh squeezed orange juice
  • 80g grated pumpkin
  • 0.5 tsp mixed spice
  • 1tbsp light brown sugar
  • 40g caster sugar
  • 1.5g mixed spices
  • 1 orange, cut into slices

Method

  1. Step 1

    For the orange juice, bring all of the ingredients to the boil in a pan.
  2. Step 2

    Pop into a container and leave in the fridge overnight to infuse.
  3. Step 3

    Dip the rim in the sugar and spice mix.
  4. Step 4

    Pass the juice through a fine sieve before mixing with the Champagne or Prosecco.
  5. Step 5

    To assemble, rub the rim of a champagne flute with a slice of orange.
  6. Step 6

    Mix the sugar and spice together.
  7. Step 7

    Dip the rim in the sugar and spice mix.
  8. Step 8

    Fill half of the flute with the chilled pumpkin spiced orange juice and top up with the chilled champagne or prosecco.
  9. Step 9

    Garnish with a slice of orange.
