Potato, Cheese and Onion Pie

A deliciously comforting dish, you can whip up this tasty pie in just over an hour. Time and servings

Ingredients
- 0.5 tsp of wholegrain mustard
- 100 ml of semi-skimmed milk
- 1 tbsp of oil
- 80 g of grated mature cheddar cheese
- 2 onions, peeled and chopped (approx 190g)
- 1 medium-size potato, peeled and cut into chunks (approx 400g)
- 1 egg
- 200 unsalted butter
- 450 g of plain flour, plus 1 tbsp for the sauce
Method
- Step 1Preheat the oven to 180oc.
- Step 2Make the pastry by rubbing the fat into the flour, season with salt and pepper and add 5-6 tablespoons of water to bind the pastry together, making sure it’s not too wet (you can always add more four). Alternatively, you can buy ready made pastry.
- Step 3Leave the pastry to chill for 30 minutes before using.
- Step 4Roll out the pastry and line an ovenproof dish with it.
- Step 5Make sure there’s enough pastry for the top of the pie.
- Step 6Boil the potatoes in water until tender but not quite falling apart, meanwhile in a separate pan add the oil and fry the onions.
- Step 7Add the potatoes, and cook for 2-3 minutes.
- Step 8Add the flour and stir in well, then add the milk and cook for 2 minutes to thicken and make a little saucier.
- Step 9Add the cheese, mustard and a little salt and pepper to taste, before allowing to cool slightly.
- Step 10Put the potato mix on the pre-lined pie you have retrieved from the fridge, and then put on a pastry lid, brush round the rim with beaten egg before crimping the lid onto the base.
- Step 11Brush the whole pie with beaten egg and place in the oven, bake at 180oc for 25-30 minutes til golden brown.
- Step 12Serve with vegetables of your choice or eat cold with a salad.
