Ingredients
- 50 g of vinegar
- 6 g of smoked paprika,3g for BBQ sauce and 3g for dry rub, alternatively you can use cajun spice or curry powder
- 2 g of sugar
- 60 g of tomato puree
- 1 pack pork loin steaks/chops
- 50 g of light brown sugar, (you can also add 1x grated apple for extra freshness, approx 80g)
- 1 g of salt
Method
Step 1
Dust the pork loins with the dry rub ingredients.Step 2
To make the BBQ Sauce you need to add sugar to a pan and caramelize by cooking down to a syrup, add the vinegar to help dissolve the sugar, and cook out before adding the tomato puree.Step 3
Add the smoked paprika and any other spices, (ground cumin works well along with chili powder) if you have any, try adding a couple of teaspoons of worcestershire sauce as this works really well.Step 4
Add a little water if you want (3-4 tablespoons) and a pinch of salt and cook down to a sticky sauce.Step 5
Grill or pan fry your pork loin steaks and brush with the barbecue sauce as you cook to build up a sticky coating, you can make a parcel of tin foil and put the pork and the sauce in the oven and cook for 25-30 minutes for a sticky boneless pork rib.
