Poached Eggs with Avocado and Feta on Toast

Ingredients

  • 1 tsp of chilli flakes
  • 0.5 lemon, juice of
  • 2 slices of wholemeal bread
  • 2 large eggs
  • 1 avocado
  • 50 g of feta
  • 1 spring onion, chopped

Method

  1. Step 1

    Bring a large saucepan of water and vinegar to a boil over a high heat.
  2. Step 2

    Once boiling, reduce the heat so the water simmers, then use a spoon to swirl the water. Crack in both eggs and cook for 2 1/2 minutes.
  3. Step 3

    In a smaller bowl mash together the avocado, feta, chilli flakes and lemon juice. Season well with black pepper.
  4. Step 4

    Toast the bread then add on the mixture. Finally finish with a sprinkle of the spring onions add a poached egg on top then serve.
