Ingredients

  • 1 pizza dough
  • 1 handful of salad mix
  • 5 ml of garlic oil, or olive oil
  • 2 cherry tomatoes, halved
  • 25 g of goat's cheese, crumbled into 8 pieces
  • 28 g of red onion, sliced
  • 1 pinch of black pepper
  • 1 pinch of oregano
  • 60 g of passata
  • 1 handful of blanched spinach
  • 40 g of red onion chutney
  • 5 ml of pizza express house light dressing

Method

  1. Step 1

    Preheat your oven to 230°C
  2. Step 2

    Split the dough in 2 portions (if making two pizzas remember to double-up on the topping ingredients!)
  3. Step 3

    Roll out the dough to the thinness you’d like and place it on an lightly oiled baking tray
  4. Step 4

    Place a round plastic cup/container (about 8cm side) in the middle of dough and cut around it using a knife. Remove the excess dough from the middle (you can use this to make a mini garlic bread!)
  5. Step 5

    Spread your Pizzaexpress passata around your Leggera base.
  6. Step 6

    Add onion chutney, spinach and sliced onions to your base.
  7. Step 7

    Top with goats cheese, oregano, black pepper and garlic oil.
  8. Step 8

    Bake for 10-12 minutes until golden brown.
  9. Step 9

    Add the lettuce and tomato to the centre of your Leggera.
  10. Step 10

    Top the salad with PizzaExpress light house dressing.
