Ingredients

  • 2 Morrisons The Best part-baked sourdough stonebaked baguettes
  • 8 slices ready to eat pork loin
  • 100g Morrisons The Best Brussels Paté
  • 2 spring onions, finely sliced
  • 100g radishes, sliced
  • 1/4 cucumber, sliced
  • 1 carrot, julienned (or grated)
  • 2 limes, juiced
  • 6 tbsp rice vinegar
  • 1 tbsp fish sauce
  • 1 red chilli, diced
  • A handful of coriander
  • 5 tsp caster sugar
  • 2 tbsp soft butter

Method

  1. Step 1

    For the pickles, heat the rice vinegar, 2 tbsp water and 3 tsp sugar in a small pan with a pinch of salt. Pour over the radish and carrot, cover and leave to pickle for at least 30 mins.
  2. Step 2

    Cook the baguettes following pack instructions. For the dressing, whisk the fish sauce, lime juice, diced chilli and 2 tsp sugar together in a small bowl. Taste and adjust, adding more sugar, lime or fish sauce if you like.
  3. Step 3

    Slice the baguettes in half, then spread with butter. Spoon over some of the paté and spread to the sides, then layer up the pork loin, drained pickles, spring onions, and coriander. Add a spoon of the dressing, then serve with more to dunk into.
