To get the perfect roasty, make sure you choose floury potatoes rather than waxy. Then just follow these simple steps, and you'll be on to a winner.

Ingredients

  • 100 ml of olive oil
  • 2 kg of potatoes
  • 1 tsp of salt flakes

Method

  1. Step 1

    Heat the oven to 220°C/200°C fan/Gas 7. Peel the potatoes, cut into evenly sized chunks and cook in boiling water for 10 minutes. Drain well, place the lid on the pan and shake the pan to scuff the surface of the potatoes (the key to lovely crispy roasties).
  2. Step 2

    Drizzle them with the oil, add salt flakes and shake the pan again. Arrange on a large baking tray lined with parchment and roast for 35-40 minutes until golden and crispy.
