Ingredients

  • 4 tbsp of evaporated milk
  • 400 g of icing sugar
  • 5 drops of peppermint essence
  • 30 g of dark chocolate
  • 2 drops of green food colouring

Method

  1. Step 1

    Sift the sugar into a bowl. Add the milk, essence and colouring if using. Combine into a soft dough. On a surface dusted with icing sugar roll the dough to 1/2cm thick. Stamp out small rounds and leave under a tea towel to harden overnight.
  2. Step 2

    Melt the chocolate over a pan of simmering water. With a piping bag drizzle on fine lines of the melted chocolate. Allow the chocolate to harden. Store in the fridge for up to two weeks.
