Ingredients
- 20 g of shallots, finely diced
- 3 dashes of freshly ground black pepper
- 250 g of potatoes, peeled and cut in half
- 325 g of birds eye peas
- 1 dash of nutmeg
- 1 tbsp of double cream
- 50 g of unsalted softened butter
Method
Step 1
Cook the potatoes in boiling water for about 20 minutes or until cooked. Drain well and mashStep 2
While the potatoes are cooking, melt 2 teaspoons of the butter. Add the shallots and cook until they are soft but not coloured.Step 3
Cook the peas according to the packet instructions and then purée them in a blender.Step 4
Combine the mashed potatoes, remaining butter, double cream, pea purée and shallots. Season to taste with pepper and nutmeg.
