Ingredients

  • 1 onion
  • 400 g of chopped tomato
  • 225 g of chorizo
  • 1 tsp of smoked paprika
  • 0.5 tsp of ground cumin
  • 1 tbsp of tomato purée
  • 2 cloves of garlic

Method

  1. Step 1

    Warm a large non-stick frying pan over a medium heat. Add the sliced chorizo and cook for 2 minutes, then stir in the onion and cook for another 3-4 minutes, until almost softened. Add the potatoes and cook for 3 minutes, before stirring in the garlic, spices, tomato purée; cook for a minute. Pour in the chopped tomatoes, stir well, then bring to the boil. Simmer for 4-5 minutes until thickened.

    Serve as a side dish or with other tapas-style selections.
