Ingredients

  • 2 Market Street Hake fillets
  • 1 shallot, finely diced
  • 2 garlic cloves, chopped
  • ¼ red chilli, finely diced, optional
  • 4 tbsp extra-virgin olive oil, extra for frying
  • 8 leaves fresh oregano or a pinch of dried oregano
  • 6 large basil leaves, roughly chopped
  • 250g Fresh The Best Classic Tomatoes, or 400g The Best Italian Chopped Tomatoes
  • 6 pitted fresh olives, cut into quarters, optional
  • Sea salt
  • Cracked black pepper
  • Buttered steamed spinach, to serve

Method

For the sauce

  1. Step 1

    Heat the oil in a non-stick pan over a medium-low heat.
  2. Step 2

    Add the shallot, garlic, and red chilli (if using) with a generous pinch of salt and fry for 5 mins, or until soft.
  3. Step 3

    Add the fresh olives (if using) and cook for a further 2 minutes.
  4. Step 4

    Stir the tomatoes and oregano into the pan, bring to a gentle simmer, and cook, uncovered, for 10 mins. Check the seasoning to your preferred taste.
  5. Step 5

    Add the fresh chopped basil to finish. Keep the sauce warm while you cook the hake.

For the fish

  1. Step 1

    Lightly coat the base of a non-stick frying pan with extra virgin olive oil, then place the pan over a medium-high heat.
  2. Step 2

    Once the pan is hot, season the hake with sea salt.
  3. Step 3

    If cooking skin-on hake: Place it in the pan skin-side down and cook for 3-4 minutes on a medium heat until the skin is nicely golden and crisp. Carefully turn the hake over and cook for a further 3-4 minutes, depending on the thickness of the fillet or loin.
  4. Step 4

    If cooking skinless hake: Place it in the pan and cook for 2-3 minutes on each side, or until golden brown and cooked through.
  5. Step 5

    When the hake is fully cooked, add the Pizzaiola sauce and serve with some buttered steamed spinach.
