Ingredients
- 1 handful of coriander, roughly chopped
- 2 tsps of sugar
- 1 lemon
- 1.5 cm of fresh ginger
- 1 clove of garlic
- 1 tbsp of olive oil
- 6 tablespoons of rice wine vinegar
- 1 red chilli, finely chopped
- 6 Market Street Fishmonger Oysters
Method
Step 1
Grate your ginger and garlic then set aside.Step 2
In a bowl add the rice wine vinegar, finely chopped and de-seeded chilli, sugar and roughly chopped coriander.Step 3
Add the bowl of ingredients to the pan and heat until they start to boil, then take the pan off the heat and set aside.Step 4
In a pan heat your olive oil and gently fry the garlic and ginger for about 2 minutesStep 5
Put a spoonful of your sauce on top of your shucked oysters and put under the grill for 11 minutes - or until the oysters start to curl at the edges.Step 6
Drizzle with freshly squeezed lemon juice to serve.
