One-Pan Baked Feta with Summer Tomatoes, Oregano & Butter Beans

Bake feta in the oven with garlicky, herby tomatoes and butter beans for an easy one-pan summer dish. Perfect for serving with crusty sourdough for scooping.

Ingredients

  • 400g mixed tomatoes, halved or quartered
  • 400g butter beans, drained
  • 2 tsp dried oregano
  • 2 tsp paprika
  • 3 garlic cloves, crushed
  • 3 tbsp extra virgin olive oil
  • 200g feta
  • Pinch of chilli flakes (optional)
  • 1 lemon, zested and ½ juiced
  • Toasted sourdough, to serve

Method

  1. Step 1

    Heat the oven to 200C/180C fan/gas 6. Tip the tomatoes and beans into a baking dish. Scatter with the oregano, paprika and garlic and drizzle with 2 tbsp oil. Season and toss to coat the beans in the garlicky oil.
  2. Step 2

    Nestle the feta in the middle of the dish, top with a pinch of chilli flakes, lemon zest and a drizzle of oil. Squeeze the lemon juice over the beans and tomatoes.
  3. Step 3

    Bake for 25-30 mins until the feta is tender and golden brown. Serve with toasted sourdough for scooping.
