Ingredients

  • 850g beef for stewing - Morrisons The Best Shorthorn Diced Beef
  • 2 celery sticks, chopped
  • 2 large carrots, chopped
  • 1 onion, chopped
  • 600ml strong beef stock
  • 3 packs ready rolled puff pastry
  • 1 egg, lightly beaten
  • 1 bay leaf
  • 1 tbsp butter
  • 2 tbsp tomato puree
  • 2 tbsp plain flour
  • 1 tbsp veg oil
  • greens, mash and gravy to serve

Method

  1. Step 1

    Preheat the oven to 160°C/140°C fan/gas 3. Put the oil in a casserole dish that can go on the hob and the celery sticks, onion, carrots, bay leaf and fry gently for 10 mins until soft.
  2. Step 2

    Add the beef and stir it in, there’s no need to brown it. Stir in the butter and flour, followed by the tomato purée and stock and bring to a gentle simmer.
  3. Step 3

    Cover and put in the oven for 2hrs 30 mins, then uncover and cook for 30mins more until the meat is very tender and the sauce is very thick, cook it longer if you need to. Leave to cool completely.
  4. Step 4

    Heat oven to 200°C/180°C fan/gas 6. Unroll the puff pastry sheets and cut 8 rounds about 14cm across. Lay 4 of them on two baking sheets lined with parchment and divide the meat mixture between them, keeping a wide border at the edge free. Brush the edge of each pie base with a little egg and then press on the pie tops. Crimp the edges with a fork all the way around and cut a steam hole in the top of each. Brush with beaten egg and bake for 30 minutes or until the pastry is golden and cooked through.

    Serve with greens, mash and gravy.
