More veggie pasta nights. Put a healthier twist on everyone's fave comfort food with spiralised courgette coated in a rich and creamy carbonara sauce. Yum!

Ingredients

  • 6 large egg yolks
  • 75g Parmesan, finely grated, plus extra to serve
  • 140g pancetta, diced (smoked or unsmoked)
  • 2 garlic cloves, crushed
  • 5 courgettes, spiralized, or peeled into thin ribbons and then cut in half again lengthways
  • Salt
  • Black pepper
  • Ciabatta bread, toasted to serve

Method

  1. Step 1

    Mix the egg yolks and Parmesan with a large pinch of black pepper in a bowl and set aside.
  2. Step 2

    Add the pancetta to a large, non-stick pan over a medium heat and cook for 5 minutes until golden. Add the garlic and cook for a further few minutes until the pancetta is crispy.
  3. Step 3

    Add the courgette, stir, and cook for 3-4 minutes, or until just tender.
  4. Step 4

    Reduce the heat to low. Add the Parmesan and egg mixture to the pan. Stir continuously for a minute or two until heated through, ensuring the eggs don't scramble. Season with salt and pepper to taste.
  5. Step 5

    Serve into bowls and top with extra Parmesan and toasted ciabatta bread. Enjoy!
