Mussel and Chorizo Bake

Ingredients
- 1 small handful of flat leaf parsley, chopped, to garnish
- 1 red onion, sliced
- 100 g of chorizo, sliced into 1cm pieces
- 200 g of cherry tomatoes, halved
- 400 g of chopped tomatoes
- 2 cloves of garlic
- 750 g of mussels
- 100 ml of white wine
Method
Step 1
Preheat the oven to 180C fan/200C/gas 6.Step 2
De-beard and rinse the mussels in cold water, discarding any broken shells or open mussels. Place in a medium sized roasting tin.Step 3
Add the remaining ingredients, season with salt and pepper and mix well to combine the ingredients.Step 4
Cover the roasting tin tightly with tin foil and bake for 10 minutes in the preheated oven.Step 5
Remove the foil and bake for a further 30 minutes, stirring half way through the cooking time.Step 6
Once cooked, discard any mussels which have not opened and garnish with chopped flat leaf parsley.
