Morrisons Mother’s Day Roast Beef and Crispy Roast Potatoes

A classic roast with a twist, our mustard-topped beef is a delicious and family-friendly meal. Don't be put off by the mustard! It may sound overpowering, but once you cook it, it's sweet and aromatic.Time and servings

Ingredients
- 1 tbsp of fresh thyme leaves
- 3 kg of morrisons british beef topside joint
- 1 tsp of morrisons yellow mustard seeds
- 1 tsp of morrisons sea salt
- 1 tsp of morrisons mixed peppercorns
- 1 tbsp of morrisons english mustard
- 3 tbsp of sunflower oil
- 2 kg of morrisons potatoespeeled and cut into quarters (we used Maris Piper)
- 1 tbsp of olive oil
Method
- Step 1Pre-heat the oven to 180/gas mark 6.
- Step 2Crush salt, yellow mustard seeds and peppercorns in a pestle and mortar.
- Step 3Add the fresh thyme leaves to the mix.
- Step 4Put the beef in a roasting tin and spread the mustard across the top side of the meat.
- Step 5Cover the mustard with the seasoning mix and pour over the olive oil.
- Step 6Pop the meat in and roast.
- Step 7Let the meat rest for 30 min before carving, turn the oven up to 225°C/Gas 8 and pop in the roast potatoes.
- Step 8Cut the potatoes in to quarters.
- Step 9Par boil the potatoes in a pan for 10 mins.
- Step 10Drain, return them to the pan and replace the lid, shaking gently to create a fluffy edge.
- Step 11Add 3tbs of sunflower oil to a roasting tin and tip in the potatoes, toss gently and season with salt and pepper.
- Step 12As the meat comes out of the oven raise the oven temperature to 225°C/Gas 8.
- Step 13Roast for 40 min until brown and crispy.
