Ingredients
- 2 tsps of olive oil
- 100 g of thin spaghetti, broken into short lengths - you can use any small pasta, or broken pieces of pasta
- 250 g of frozen mixed vegetables
- 1 can of chopped tomatoes
- 1 can of can mixed beans, drained, or you can use cannellini beans
- 1 cube of veg stock cube, made to 1litre, 500ml + 500ml Water
- 2 tsp of red pesto, you can alternatively use basil pesto or leave this out if you’d prefer 60g Tomato Puree
- 1 tsp of mixed herbs or oregano
- 80 g of coarsely grated parmesan-style cheese, to serve, optional
Method
Step 1
Add the oil to a pan and cook the vegetables and the tomato puree, cook for 2-3 minutes.Step 2
Add the stock, pasta and chopped tomatoes, dried herbs and the beans.Step 3
Bring to the boil, and simmer for 10-20 minutes until the pasta is tender.Step 4
Taste to check the seasoning.Step 5
Finish with a little swirl of pesto and a shaving of parmesan if you’d like.
