Mexican style beans on toast, creamy avocado & homemade tomato salsa

Ingredients

  • 4 Slices Sliced Best Bread
  • 300g Mixed Beans
  • 1 Avocado
  • 250g Baby Plum Tomatoes
  • 500g Passata
  • 1 Red Onion
  • 1tbsp Chilli Con Carne Spice
  • 1tsp Oil

Method

  1. Step 1

    To get started, make the salsa. Chop up the tomatoes and place into a bowl. Peel and finely slice the onion, stir into the tomatoes. Season to taste with a little salt and pepper, set aside.
  2. Step 2

    Heat a teaspoon of oil in a small saucepan over medium heat. Add the beans and a tablespoon of the chili spice mix, stir and cook for a couple of minutes before adding the passata and 50 ml of water. Season with a little salt and pepper and simmer for 10 minutes, stirring occasionally.
  3. Step 3

    Slice the avocado in half and carefully remove the stone. Scoop out the flesh and either mash up or chop into chunks.
  4. Step 4

    Toast your bread and serve with the beans, avocado and salsa.
