More fish Fridays with our Mexican Fish Tray Bake - made with delicious battered white fish fillets, peppers and chopped tomatoes, all from our Savers range.Time and servings

Ingredients
- 250 g of cherry tomatoes halves
- 15 g of fajita seasoning
- 2 tsp of chipotle paste
- 2 onions
- 1 red & green pepper
- 4 fish fillets
- 1 chopped tomatoes
Method
Step 1
Preheat the oven to 200C/350F.Step 2
Place all the chopped vegetables in a large roasting tray.Step 3
Mix the Fajita seasoning, chipotle paste and tinned tomatoes together with salt and pepper.Step 4
Tip over the vegetables and mix well.Step 5
Roast the vegetables for 10-15 minutes until starting to colour.Step 6
Mix well and add the Savers white fish fillets on top of the vegetable and cook for a further 15-18 minutes until the fillets are fully cooked and crispy on top.Step 7
Garnish with coriander and lemon to finish the dish.
