Ingredients

  • 3 sprigs of mint
  • 600 ml of double cream
  • 8 meringue nests
  • 1 drizzle of honey
  • 200 g of blueberries
  • 200 g of white chocolate
  • 300 g of strawberries

Method

  1. Step 1

    Arrange the meringue nests onto a serving board in a wreath shape. Drizzle melted white chocolate over to set the meringue nests in their place.
  2. Step 2

    Whisk 600ml cream into soft peaks and spread this over the wreath (only do this within 20 minutes of serving)
  3. Step 3

    Decorate the wreath with mixed berries.
  4. Step 4

    Garnish with mint leaves and a drizzle of honey.
  5. Step 5

    Serve and enjoy.
