Lime and parmesan might seem like an unlikely combo, but they take corn to another level. Cook the cobs on skewers to make them easier to turn.

Ingredients

  • 6 corn on the cob
  • 80 g of unsalted butter
  • 20 g of parmesan
  • 3 tbsp of fresh coriander
  • 1 corona extra premium lager beer bottles
  • 1 lime

Method

  1. Step 1

    Place the corn in boiling, salted water and cook for 5 minutes or until warmed through.
  2. Step 2

    In a bowl, mix together the softened butter, lime juice and zest and half the coriander, then season to taste.
  3. Step 3

    When you are ready to barbecue, remove the corn from the water and pat dry with kitchen roll. Barbecue for 3-4 minutes, rotating each piece regularly until lightly charred on all sides.
  4. Step 4

    Place in a serving dish and spread each piece liberally with the lime and coriander butter. Sprinkle over the Parmesan and the remaining coriander and serve immediately.
  5. Step 5

    This dish goes well with Corona Extra Premium Lager.
