Ingredients
- 1 handful of coriander
- 50 g of pomegranate seeds
- 150 g of feta, crumbled
- 4 tortillas, cut into triangles
- 1 lamb leg, slow cooked and shredded
Method
Step 1
Cut the tortillas into triangles, place on a grill tray and brush with oil and season both sides. Grill for around 1 minute until golden and remove to cool.Step 2
Place the left-over lamb in a microwavable dish add 150ml water and the feta. Heat for approx. 4 minutes or until warm throughout. Then remove from the microwave and use two forks to shred the lamb.Step 3
Scatter the shredded lamb over the nachos and sprinkle with pomegranate seeds and coriander.Step 4
Serve with a fresh tomato, red onion and mint salad with a side of tzatziki.
