Ingredients
- 230g unsalted butter, melted and browned
- 300g soft light brown sugar
- 3 medium eggs
- 300g plain flour
- 120g white chocolate, chopped into chunks
- 3 tbsp raspberry jam
- 1 pack Jammie Dodgers/Mini Jammie Dodgers
Method
Step 1
Preheat your oven to 180oC fan oven. Line an 11 x 7 inch baking tin with baking paper.Step 2
Brown the butter by melting over a medium high heat. When the butter starts to finally create frothy micro bubbles and you can see brown particles forming at the bottom of the pan, you have brown butter. This gives the blondie a more caramelised, nutty rich flavour.Step 3
Pour the hot melted butter onto the sugar. Make sure you scrape in the brown bits from the bottom of the pan. Leave this to cool for a few minutes.Step 4
One at a time, add the eggs, combining each one as you go. Adding the eggs onto hot sugar and butter can cause the eggs to scramble, that’s why we let it cool a bit first.Step 5
Stir in the flour well. You want to make sure it’s thoroughly mixed and the batter is coming away from the sides of the bowl. If you under-mix, this can cause the butter to seep out, giving you a greasy blondie so give it some welly at this stage.Step 6
Fold in the chocolate chunks.Step 7
Scrape the batter into your prepared tin and dot the jam on the top. Then add the Jammy Dodger biscuits pushing them slightly into the surface of the blondie.Step 8
Bake for around 35 minutes in the middle of your oven until the blondie is baked through. Test with a skewer to see if it’s ready. A few little sticky crumbs on the skewer is great, wet batter is not. It wants to be a little undercooked in the middle.Step 9
Remove from the oven and allow to cool completely before slicing.
