Indian Curried Lamb with Sour Cream Wrap

Ingredients

  • 1 sprig of coriander
  • 1 tbsp of curry paste
  • 1 tbsp of olive oil
  • 1 tsp of sour cream
  • 1 pinch of red chilli, chopped
  • 1 little gem lettuce
  • 300 g of leg of lamb, diced
  • 1 bottle of the best pinot grigio rose
  • 2 mission deli wraps

Method

  1. Step 1

    Marinate the lamb with Indian curry paste and leave for 30 minutes.
  2. Step 2

    Heat olive oil in a large pan until hot.
  3. Step 3

    Add the lamb and cook for 2-3 minutes on each side – or until cooked to preference.
  4. Step 4

    Set aside on a board to rest for 5 minutes, then slice into strips.
  5. Step 5

    To serve, layer the lamb and baby gem leaves onto the Mission Deli Wrap, sprinkle on the chilli and coriander (or parsley).
  6. Step 6

    Add a spoonful of the sour cream into the centre. Roll up before serving.
