Huevos Rancheros

Ingredients
- 4 Mini Tortilla White
- 1 Avocado
- 2 Eggs
- 250g Baby Plum tomatoes
- 35g Feta Cheese
- 1 Red Onion
- 1 Lime
- 1 Tin Kidney Beans, drained
- 8g Chipotle Chilli Paste
- Salt, to taste
- Pepper, to taste
- Olive oil
Method
Step 1
Drain and rinse the kidney beans. Place them in a bowl with a drizzle of olive oil, a squeeze of lime and season well. Using a fork or a potato masher, mash until you get a slightly chunky mash. Stir in half of the chipotle paste and set aside.Step 2
Peel and finely slice the red onion along with the tomatoes. Place in a bowl, season to taste and put to one side.Step 3
Heat a non-stick frying pan over a high heat. Brush a little oil or water over the wraps and fry for a minute on each side. Remove from the pan and keep warm whilst you cook the eggs.Step 4
Reduce the heat of the hob to medium and drizzle in a little oil, crack the eggs into the pan and gently fry until the whites are set and slightly crisp and the yolks are still runny (or cook to your liking)Step 5
Whilst the eggs are cooking, warm the bean mash in the microwave for 2 minutes.Step 6
Slice the avocado in half and carefully remove the stone. Scoop out the flesh with a spoon and slice up or mash with a fork to make a guacamole.Step 7
Mix the chipotle paste with a little olive oil or water to make it a little runnier so you can drizzle over the top of your food.Step 8
To serve : Take a wrap and spread the bean mash over the top, add the avocado, eggs, tomato and onion salsa, crumble over the feta cheese and drizzle over the chili oil. Season with pepper if and a squeeze of lime.
