Hot Honey Pumpkin Bread

Ingredients
- 175g butter, very soft
- 140g hot honey or clear honey plus a pinch of chilli flakes plus more to serve
- 100g light soft brown sugar
- 1 egg
- 250g raw, peeled pumpkin, coarsely grated (frozen is fine)
- 350g self-raising flour
- 1 tsp baking powder
- 2 tsp ground cinnamon
- Crème fraiche or plan yogurt to serve
Method
Step 1
Heat the oven to 180°C/ fan 160°C/gas 4. Butter and line the base and two long sides of a 1.5kg loaf tin with strips of baking paper.Step 2
Mix the butter, honey, sugar and egg in a large bowl and stir in the pumpkin. Then mix in the flour, baking powder and cinnamon.Step 3
Tip the mixture into the prepared tin and level the top. Bake for 45-50 mins, until the pumpkin bread is risen and golden brown. Drizzle the top with 1 tsp honey. Leave in the tin for 10 minutes, then turn out gently and cool to warm, the right way up, on a wire rack.Step 4
Serve thickly sliced while still warm with crème fraiche and more hot honey, or cool and the toast slices to serve in the same way.Step 5
This loaf will keep for several days in a cool place, or slice it up when cool and freeze, defrost when you need it.
