Everyone loves a Jammie Dodger, this recipe lets you try your hand at making your own version. The kids will love it, if you've not eaten them all yourself.Time and servings

Ingredients
- 6 tbsp of raspberry jam
- 1 egg
- 60 g of golden syrup
- 110 g of unsalted butter, softened
- 150 g of caster sugar
- 1 tsp of bicarbonate of soda
- 350 g of plain flour
- 2 tbsp of icing sugar
Method
Step 1
Preheat the oven to 180°C/350°F/Gas 4. Line two baking sheets with baking parchment.Step 2
In a large bowl, mix together the flour, bicarbonate of soda, caster sugar, butter, golden syrup and egg until a soft dough is formed.Step 3
Dust the surface with flour and roll the dough out to about 5mm thick. Cut shapes out, and using a small circular cutter make a hole in the centre of half of them. Place on baking sheets and bake for 15 minutes. Cool on a wire rack.Step 4
To finish, place a little jam or lemon curd in the centre of the shapes without holes. Place the shapes with the holes on top of the jam halves. Sift icing sugar over and serve.
